You don't need maximum render quality if you aren't scaling the footage. Also you are rendering it in VBR 2-pass which will pretty much double the render time because it gets encoded twice.

You can do a bunch of stuff in Quicktime that is not supported in the official MP4 spec. Personally I wouldn't use that.

You should have the codec under the Quicktime codecs if you are on a Mac. If you are on a Windows you can't export to prores with AE.
