You can't mix and match in Premiere. Multichannel exports will be mono tracks.

You can do a bunch of stuff in Quicktime that is not supported in the official MP4 spec. Personally I wouldn't use that.

You should have the codec under the Quicktime codecs if you are on a Mac. If you are on a Windows you can't export to prores with AE.

You can't pass through the RAW file information because you can't render out a RAW file because the data it has is created in camera. You could probably use an EXR sequence.
