I can answer the first part of your question. No it's not Apple Talk yet. As a user of Bluetooth speakers, they are OK for audio only applications as the delay makes them out of sync with video sound

I solved the issue. fmpeg -i input.mpg -c:v copy -c:a pcm_s16le output.mov Then when it comes into Premiere it took the 5 hour file several minutes to load.
