Yes that is not expected behaviour and might be a bug related to the camera original footage. One way to tell is to render a 1080p version, bring that back into a new timeline and then output the 720p

I can answer the first part of your question. No it's not Apple Talk yet. As a user of Bluetooth speakers, they are OK for audio only applications as the delay makes them out of sync with video sound

Not much point in using HQ. Normal ProRes422 is fine for footage coming from a DSLR. Have a search on the Final Cut Pro forum for advice from Gary Adcock about avoiding HQ except for 2k up frame sizes
