Is it actually shipping yet I tried the 590, it gave an error on resolve start as being an unsupported card. But was still functional, though nowhere near double performance to the 580. More like 1.2x

Menu O-27, Rec Format. Set System Line = 1080, System Frequency = 59.94i, Rec Format = IMX 50, Aspect Ratio = 16:9. The Aspect selection is not available until you select an SD format.

Record your audio on the Zoom H4N audio recorder or similar. I treat the 7d like an MOS camera. Just time your start and stop times every ten minutes or so, and let the audio recorder run continuously

You are limited to 5 minutes of recording time in HD mode, and 20 minutes in lower resolution modes. If you want QUALITY audio, then record with a separate audio recorder. The DSLRs should be treated
