Hey man. I would go your second rout by setting the anchor points and parenting everything to the torso and animating each part individually. I use that style a lot for my cartoons. See some examples

Inside your camera options you should be able to turn depth of field off. That should keep everything in your composition sharp. I would recommend trying a "fake" depth of field after that using the g

I recommend taking the layers you don't want affected by the lights and go into the material options (make sure you have 3D layer switched on) and change effected by lights from on to off. I hope this
