This has been there for a long time. Probably more options now than there used to be, but its an old feature. I ve definitely used the Red Offline Media indicator for more than a decade.

Usually when creating a TIFF file you are given the choice of PC or Mac byte order. Perhaps the Linux version can only read PC byte order (or vice versa, less likely).

The 2017 Screenshot uses the GoPro Cineform codec. The 2018 Screenshot is using H.264, which I believe does not support that many audio channels

As a test, run it through compressor, as ProRes HQ. I have a feeling that third party software is using a hacked reverse engineered ProRes Codec and Cinema Tools is balking.

No. That's not an analog to digital converter. It just is an adapter between Two types of AES audio connections (BNC and XLR).
