I'm not sure I understand how the mosaic effect can be used for these To my eye it is more like each slice of the layer is a new version offset. Or am I missing something

The faces of the letters can be altered using the distort tool. Then make the sides using a drawn mask and textures gradients.

I'm not sure if you can actually tweak the airbrush settings to get those looks, you could try altering your Brush Presets though. It looks more of a case of adding Noise (especially the first image)
