an easy way to get something close, though its a bit a of a process, would be to create the gradient in photoshop. then change the color space to index color (image mode index color) and select 'web'

As you can see in the attached image, if I eased the keyframes, I would end up with each stroke being eased. There are 5 different strokes on 5 different shape layers so by easing them, I end up with
