Canon 5D Mark II records stereo audio when an appropriate external mic is attached. The audio is 16-bit for left and right tracks. The internal mic is monaural and is likely 16 bit also. High-end auto

I have not tried it yet, but they say it helps to convert to Cineform .avi or .mov. It interpolates 4:2:0 to 4:2:2. Like I say I have not tried it, but they say it helps. $99.00 B&H or Videoguys.com N

You know, the best way to improve your video quality is a tripod. It sounds like a fluid-filled head is outside of your budget, but even an inexpensive one will give you a way better viewer experience
