I would use the BBC camera settings as a starter. How is the SD conversion carried out We drop HD programmes to HDCAM tape and then use Sony VTR SDI output as the source for making SD copies. Quality

I have always doubted the J series of decks for sync. I cannot put my finger on it but offlining with a J3 and then onlining with a real deck has caused sync problems.

Your heads are used to Sony. Maxell back in SP SX days was much more abrasive (not sure if it is now as I use only Sony) so if you end up with Maxell shaped heads then if you put in Sony or Fuji there
